I know this is probably a stupid question, but . . . how do you remotely check your e-mail (i.e. I've been out of the office for the past three days and would like to see if anyone from the UBR has sent me an e-mail to confirm tomorrow's meeting.)

It depends on your service provider. Mine is AOL. So all I have to do is go to AOL.com, and log on. I can get my emails and IM. ( you know who ) :o

I use Yahoo as my email client and also IM so I can access it from any computer as well.

Download Mozilla Thunderbird (http://www.mozilla.com/thunderbird/) and try that. :D :D
