In The Spirit Of The Season II
So the event went well.
I have to admit....when you guys all get to be my age your memory comes and goes. I remember a few folks asking me the recipe for the Spinach Balls that i brought but I cant remember who they are so i decided to just post it here. I figure you that asked will see it and those that wanted it will get it.
So here it is:
Baked Spinach Balls
12 servings (2 balls each)
2 cups herb-seasoned bread stuffing cubes
¼ cup grated Parmesan cheese
¼ cup chopped onions
2 cloves garlic, minced
1/8 teaspoon ground nutmeg
10 ounces finely chopped fresh baby spinach
¼ cup vegetable stock
2 tablespoon margarine, melted
2 egg whites, beaten
1. Combine stuffing, Parmesan cheese, onions, garlic,and nutmeg in a medium bowl. Mix in spinach, stock, margarine; season to taste with salt and pepper. Mix in egg whites
2. Shape mixture into 24 balls. Bake at 350 degrees until golden brown, about 15 minutes. Serve with Mustard Sauce
* ingredients may be changed to light or fat free
Mustard Sauce
8 servings (2 tablespoons each)
¾ cup fat free sour cream
3-4 teaspoons of Dijon-style mustard
1½ -2 tablespoons honey
Mix all ingredients, refrigerate until ready to serve
